Combine 1 oz. Sugar Island Coconut Rum
1 oz. Pineapple Juice
3/4 oz. Lemon Juice
3/4 oz. Aperol
1/4 oz. Simple Syrup in a shaker with ice
Strain into a rocks glass filled with ice.
Top with sparkling Rosé and garnish with a skewer of pineapple chunks.
