Thai Cucumber Collins

Ingredients:

4 fresh mint leaves
3 sugar cubes
2 1/4 inch cucumber slices
1 tsp. grated lemongrass
6 tbsp. fresh pressed cucumber juice
1/4 cup 2 oz. white rum
2 tbsp. fresh lime juice
6 tbsp. club soda
Cucumber slices and mint leaves for garnish




How to make it:
Muddle mint leaves, sugar cubes, cucumber slices and grated lemongrass in a cocktail shaker.
Add fresh pressed cucumber juice, white rum, and fresh lime juice. Swirl to combine. Add ice,
cover with lid, and shake vigorously until thoroughly chilled. Strain into an ice filled Colling glass.  Top with club soda.  Garnish with cucumber slices and mint leaves, if desired
