Wassail

Wassail is basically a warm rum punch flavored with fruit and spices.  This stuff is potent, tasty and a traditional beverage to serve up at Christmas and New Year's, especially if you live somewhere cold.

Ingredients:
(Yields 30 servings)

1 gallon apple cider
2 quarts cranberry juice
1 tbsp aromatic bitters
4 cinnamon sticks
1 tbsp white allspice
2 oranges, studded with cloves
2 cups (Appleton Estate V/X®) Rum

Combine all ingredients and warm slowly over low heat.  Serve warm, and if you can keep the punch on heat, even better (the smells of cinnamon and apple will float through your house).

Gingerbread Man

Who doesn’t love Gingerbread?

Europeans have been making Gingerbread for more than 1000 years, each country having it’s own special recipe. At some point folks in Northern Europe started making houses and people out of Gingerbread for holiday markets. The town of Bergen, Norway builds an entire Gingerbread town.

Thus was born the Gingerbread Man.

The popular cookie hopped the Atlantic with Europeans and has been with us ever since.

The famed Waldorf Astoria, in New York City created this liquid version you to enjoy this holiday season.

Ingredients
  • 1.5 oz Stolichnaya Vanilla Vodka
  • 1 oz Cinnamon Stick Infused Vodka (Place 4 Cinnamon Sticks In 1 Liter Of Vodka, Turn Upside Down Every Other Day For A Week, Then Begin To Use)
  • 1 oz Heavy Cream
  • .5oz Monin Gingerbread Syrup
  • Fresh Nutmeg

French 75

French 75
Rob Palmer / Photolibrary / Getty Images
The story of the French 75 goes back to around 1915 when Harry MacElhone created in at the New York Bar in Paris. It was brought to the U.S. by returning World War I pilots and became a popular drink at New York City's Stork Club. The name comes from a 75mm French field gun that was said to have the same kick as the drink.

At some point in its early history this drink was made with Cognac in place of the gin and there is some question as to which version is the real French 75, but gin is the more common now. To add another twist, if the same drink is made with vodka for the base spirit, it is a French 76.

Ingredients:
1 ounce gin or cognac
1/2 ounce Contreau orange liqueur
1@ ounce lemon juice
Champagne

Preparation:
Pour the lemon juice, gin and Contreau into a cocktail shaker with ice cubes.
Shake well.
Strain into a chilled champagne flute.
Carefully fill with champagne.

Highball Recipe

Highball. Photo Courtesy: © Shannon Graham

Every aspiring professional bartender should put this easy highball on their list of drinks to memorize. It is, quite simply, whiskey and ginger ale and is a fantastic, refreshing way to enjoy any style of whiskey you choose. Rye, Canadian, or bourbon whiskies work very well.

You may find some Highball recipes that use soda water, but ginger ale is the most mixer.

This mixed drink should not be confused with the class of drinks called "highballs." Those include most tall drinks with a base spirit and one or two non-alcoholic mixers. Not to be too confusing, a Highball is a "highball" and is served in a highball glass.

Ingredients:
2 ounces Whiskey
Ginger Ale

Preparation:
Fill a highball glass with ice.
Pour the whiskey into the glass.
Top with Ginger Ale

Blue Bayou

As the name implies, this drink is blue which makes it great for hot summer days by default.  But the fruity and exotic taste of pineapples and grapefruit certainly do their part in making this one of the definite cool-down drinks.

15 ml (3 parts) Blue Curacao
30 ml (6 parts) pineapple juice
30 ml (6 parts) grapefruit juice

Preparation:

1. Pour the ingredients into a blender, blend until smooth.
2. Serve in a chilled highball glass.
3. If the drink it too sweet/bitter, experiment with the pineapple/grapefruit ratio.
