Pimm's Cup

Countdown to Mardi Gras

Yes, this gin cocktail was born in a London bar, but it moved to New Orleans and became the toast of the town.

2 oz. Pimm's No. 1
3/4 oz. Cointreau
3/4 oz. Lime Juice
3-4 cucumber slices
1 bunch mint
Lemon-Lime Soda

Combine the Pimm's, Liqueur, Juice, Cucumber and mint in a  Collins glass with ice, then stir gently.  Top with Lemon-Lime Soda or Ginger Beer.

(Substitute Ginger Ale, or better yet, Ginger Beer for a real zip of flavor.)
